
Welcome to the Bailliage de Dallas (dallas TX chapter) website. The Chaine des Rotisseurs, an international society, is dedicated to the promotion of the culinary and hospitality arts and oenology via example, education and comeraderie. The Dallas Bailliage is the oldest in Texas and one of the oldest in the United States, having been formed by Tony LaBarba who became the first Bailli. This chapter is credited with being the inspiration for the elevation of dining and the standards of culinary arts in the Dallas/Ft. worth area.
The "Chaine" was originally founded in 1248 in Paris by Louis IX as a society of goose cookers, to recognize the preparers roasting of the royal bird, as it turned slowly over an open fire with larding needles inserted to remove the fat. In 1509, King Louis XII created the Confrerie de la Chaine des Rotisseurs. This remained for over 500 years, until the French Revolution, when it was abolished with all the other guilds. Fortunately it was re-established in 1950 and now is active in over 100 countries with the United States having more than 150 chapters.
The chapters include both amateur gastronomes and professionals in the food and wine industries, leading to most interesting conversations along with the food and wine pairings. Membership is by invitation only; our Bailliage has approximately 50 members but we welcome potential new members and guests. Yearly, we have a diverse number of functions, including fomal dinners, Dine Around events, and Mondial soirees.
