to the Triangle Bailliage |
The Triangle Bailliage de North Carolina is a local chapter of
the Confrérie de la Chaîne des Rôtisseurs. La Chaîne is a unique
gastronomic society, headquartered in Paris, with
more than 20,000 members in over 100
countries. There are about 150 bailliages in the United States with over
7,000 members, each headed by a Bailli (chapter president). Our Triangle Bailliage has about 65 members, including
Professional Members who are listed individually on this site. Most members
live in the Raleigh, Durham, Chapel Hill area but we have members in other
places like Greensboro, Siler City and Rougemont. The Triangle Bailliage
is 20
years old in 2007.
Membership
in La Chaîne provides opportunity to meet people who share a common interest in
fine dining and good fellowship and to experience the finest culinary talent and
service. The US headquarters is on the Fairleigh Dickinson University campus in
Madison, New Jersey. The U.S. Bailli Délégué (national president) is Joe
T. Caruso.

There is no doubt that La Chaîne membership opens new opportunities for service
and for fine dining and fellowship around the world. If you are interested in attending an event as a guest or wish

membership are encouraged to first attend as guests and your interest is
appreciated! A special welcome is extended to members of other
Chaîne bailliages - if there is something we can do to help with your trip to
the Triangle area, let us know.
The Triangle Bailliage Schedule
page shows the planned gastronomic pleasures for the season that starts
in September and ends in June. Events include black tie dinners,
more casual dining experiences, and wine tastings. Great care is taken by
our officers, professionals, and host establishments to showcase the highest
quality of food and service; similar care is taken to match fine wines to the
exclusive dishes served. Chaîne events provide opportunity for an
establishment to demonstrate its highest talents to a discerning and
appreciative audience. Many establishments use the event as motivational
training for their staff.
We strive for variety and adventure in Triangle Bailliage events.
Events illustrate that good food and service can be found in both expected, and
sometimes unexpected, places. Next

immediately pending gastronomic pleasure. Our members are well-traveled and can recount
fine dining experiences around the world, but all will tell you that some of the
finest dining events they have ever attended were those of the Triangle

Professional
Members, some
of whom serve as officers of the Triangle Bailliage, represent, work at, and own
some of North Carolina's finest hotels, restaurants, and wine shops. These members and their professional affiliations
are listed on the Professional
Members page. We encourage you to
visit those establishments. Those who have lived in the Triangle area for
a while know the outstanding gastronomic progress that has happened locally in the
past twenty years. We are proud to say not only that our Professional
Members have helped make that progress possible
but that they continue to train and encourage those who will make future
contributions!
